Big Greens Salad

Big Greens Salad

This substantial salad travels well, a good choice for a lunchbox treat or a potluck item. It also works well as a bed for a grilled piece of protein. Kenter Canyon Farms Sauté Mix is washed and ready to use so it’s a snap to prepare.

Ingredients

Serves 4-6 people

  • 1 pound Kenter Canyon Farms Sauté Mix sliced into the fine strips called Chiffonade
  • ½ cup walnut oil
  • ½ cup sunflower oil
  • 5 tablespoons white wine vinegar
  • 5 tablespoons fresh citrus juice
  • 1 teaspoon citrus zest
  • 1 ounce chives chopped fine
  • Sea salt and freshly ground pepper to taste

Preparation

Prep: 10 min • Ready in: 10 min

Place the salad into a large bowl. Place the remaining dressing ingredients into a jar with a lid and shake well to combine. Pour dressing over the greens, toss and serve forth.
