Chive Potato Pancake

Chive Potato Pancake

Studded with green flecks of chive, this golden potato cake makes an excellent afternoon snack.


Serves 4-6 people

  • 2 pounds yellow potatoes, boiled whole, peeled and grated on coarse holes of a box grater
  • 2 ounces of Kenter Canyon Farms chives, chopped fine
  • 1 egg
  • ½ stick of butter or olive oil for frying the pancakes
  • Sea salt and pepper to taste


Prep: 10 min • Cook: 15 min • Ready in: 25 min

Preheat oven to 300 degrees

In a bowl combine everything but the butter and mix gently.

Melt 2 tablespoons of butter in a skillet over high heat and form a potato patty about 5 inches across and ½ inch thick and place it in the pan to brown, about 5 minutes, flip and cook the other side until golden brown. Place potato pancake on sheet pan in oven to keep hot while you cook the rest of them adding oil or butter as needed.
