Forget the bitters and let the sage do the work, this little cocktail hits the spot at about five o’clock but start a little before that to let the sage flavor the rye whiskey.

Drop the sage into the bottom of the glass and pour over the rye whiskey, let it rest there for 20 minutes then pour the whiskey and the vermouth over the cracked ice and pour it back into the cocktail glass with the sage and serve it.
