Line a large sieve with two layers of cheesecloth and set over a large bowl. Spoon the yogurt into the sieve. Cover the sieve and the bowl with plastic and refrigerate until yogurt drains and thickens, about 8 to 12 hours. Spoon the strained yogurt into a bowl. Cover and refrigerate up to 1 week.
